Background Information The United Nations Special Fund, and the Food and Agriculture Organization have supported the fisheries institute in Guayaquil, which has developed a fish sauce as one use of local catches.
Small fish are placed in large tanks with salt to ferment and the finished product is used extensively as a flavor additive, both in Ecuador and abroad. As well as this, an FAO expert was sent two years ago to instruct the people in the freezing of large catches of shrimp, and their subsequent export - mostly to North America.
