Background Information The Food and Agriculture Organization of the United Nations (FAO) has carried out a number of activities to evaluate the problems associated with street foods and to work with governments to develop programmes to improve the quality and safety of street foods. The results of these studies have been discussed at the regional and global levels. Strategies to improve street food activities have been developed. These include: licensing, food inspection and analysis infrastructure, drinking water, garbage disposal, training to vendors and consumer education. Legislation and regulations need to be updated accordingly. Regional committees of the joint FAO/WHO Codex Alimentarius Commission are preparing Codes of Practice on street foods.
