South Sudan , 2016. Water lilies to eat
January 2016, Nyal, South Sudan - During the lean season the consumption of water lilies is common, they take the fruit of the plant and grind it into a powder, which they then cook with water to make a paste. It replaces cereals like maize and sorghum. Once the fruits run out, the whole plant can be dug out of the water and the roots used for food. The consumption of it is an extreme coping mechanism for communities facing severe food insecurity. The nutritional value of this plant is low.
