23 December 2021, Lipari, Italy - Ancient wheat seeds, of the Senatore Cappelli variety, is ready to be loaded in the tank of a stone mill to grind the seeds and obtain the flour that will be used to prepare the pasta, following traditional processing methods, in the Piano Conte district, in Lipari, in the Aeolian Islands Archipelago, north of Sicily. Recently in the Aeolian Islands there is a return to agriculture, with particular attention to products and methods of ancient tradition, such as the cultivation of ancient wheat seeds, a variety of grains that were used in the past in southern Italy and that never underwent no modification by man. Some examples of ancient wheat varieties are Senatore Cappelli, Maiorca, Russello.
